- Story Text: France on Monday (September 27) snagged this year's prestigious Bocuse d'Or competition, a first in seven years for the country widely hailed as the world's culinary capital.
The Bocuse d'Or competition, also known as the gastronomy world's Olympics, is back after a year of absence due to COVID-19 restrictions, with 24 teams from around the world participating.
French chef Davy Tissot led his team to victory, offering tomatoes stuffed with shrimp served with a jus, virgin basil oil and a condiment of French mushrooms and herbs, and a fermented tomato "candy" and coulis for dessert.
"It was great, a great experience. It's a pleasure, we had a lot of fun," Tissot said.
Denmark, the winners of the last edition in 2019, placing second, and Norway trailing at third.
France's win this year marks the eighth Bocuse d'Or trophy for France, since the contest was founded by world-renowned French chef Paul Bocuse in 1987.
Chefs are judged on flavour, originality and presentation.
Inspired by the rise of to-go food as restaurants were forced to close in the height of COVID-19 lockdowns last year, this year's competition featured a takeaway contest, which was won by Sweden.
The contest also awarded a "Special Commitment" mention for Colombia's brigade.
"It shows that countries have evolved a lot, it's great," said acclaimed French chef Christian Tetedoie, a member of the organizing committee. "The Bocuse d'Or was not made to make France win, but to move gastronomy forward. And so, all the world's cuisines are advancing, and that's what we want."
